Beef Stew

My aunt gave me these wonderful canned tomatoes and tomato juice straight from her 2011 summer garden.




I used the tomatoes for the chicken, tomato, mushroom dish again and with the tomato juice I made beef stew. The tomato juice makes an excellent broth for the stew. This is a spin off of something very similar my mom used to make growing up.



Diced onions, garlic, yellow potatoes, carrots, frozen peas, beef chunks, s&p and tomato juice (two 8 ounce cans if you don't have an aunt supplying you with it). Turn the crock pot setting to low and let it simmer away all day. I also let the beef chunks marinate in Worcestershire sauce for about 30 minutes prior.

Canned fruits and veges are so much better than the stuff you get at the grocery store. I've always been afraid to do it myself because of the sterilization process. :/ Your daughter is getting so big. Hope all is well. Have a great rest of the week. Tammy
